The Christmas Eve Menu from Klopotenko – original dishes

Would you like to decorate your New Year’s table with delicious traditional dishes? Then you should cook several dishes from Evgeny Klopotenko. You will definitely enjoy their incredible taste and appearance.


How to cook kvash?


You will need:
? 300 ml of kvass;
? 100 grams of compote set (smoked pears or apples);
? 4-5 pieces of preferably rye bread (and 100 or 150 grams of chips);
? 50 grams of walnuts;
? salt and red pepper to taste;
? juice of half a lemon


Cooking plan:


1️⃣ Soak 5 slices of bread in kvass for ten minutes. You should also add a pre-prepared compote set.
2️⃣ Bring the uzvar to a boil and let it cool. No need to remove pears and apples from the liquid.
3️⃣ Grind soft bread on a sieve or beat with a blender. Add lemon juice and spices.
4️⃣ For chips, cut rye bread and dry for 3 minutes in an oven preheated to 185 degrees.
5️⃣ Serve kvass with bread chips sprinkled with small walnuts.


The borsch with “ears” and beet kvass, or how to pleasantly surprise guests?


For such a colorful dish you will need:
⚜️ A quarter of celery;
⚜️ 1 onion;
⚜️ 1 carrot;
⚜️ 1 beet;
⚜️ 2 small bay leaves;
⚜️ 3-5 peas of allspice;
⚜️ 2-3 cloves of garlic;
⚜️ 2 liters of water;
⚜️ Half of white cabbage;
⚜️ 3-4 potatoes;
⚜️ 3-4 tablespoons of oil;
⚜️ Half a red sweet pepper;
⚜️ A glass of tomato juice;
⚜️ Spices to taste


For kvass:


✳️ 500 g of beets;
✳️ 0.2 kg of sugar.


For “ears”:


? 150 grams of flour;
? 75 grams of water;
? a little salt;
? one tablespoon of oil


Cooking plan:


✅ Prepare kvass in advance. Wash the beets, peel, cut into small cubes and transfer to a jar. Add sugar and pour cold boiled water 4-5 cm from the beets. Leave room in the fermentation vessel. Cover with folded gauze and store in a warm place for 3-4 days.
✅ Dough for “ears”. Add all ingredients to flour and knead to a plastic dough. It shouldn’t stick to your hands. Wrap with plastic wrap and put in a cool place, basement, balcony or refrigerator for twenty minutes.
✅ Cut the potatoes into medium cubes and cook for ten minutes.
✅ Chop the cabbage and add to the boiling borscht.
✅ Fry bell peppers, add finely grated beets, pour tomato juice. Simmer until the mixture looks like a thick puree, and send to the borscht.
Make small ears out of the dough and place in the pan.
✅ As soon as the ears rise to the surface, pour in the kvass and spices.
